How To Make Lemon Curd Cake Filling

What you'll need for this recipe (see link for amounts)

Step 1: Add eggs, yolk and sugar to a medium saucepan

Step 2: Whisk sugar and eggs in the pan until smooth

Step 3: Zest lemons into the egg-sugar mixture in the pan

Step 4: Squeeze lemon juice into the pan (over a strainer is easier)

Step 5: Add butter to the mixture and heat on a low-medium heat

Step 6: Once the butter has melted, stir and heat for 15mins

Step 7: Stir until curd has thickened and coats the back of the spoon

Step 8: Pour curd into a container and allow to cool on the side

Step 9: Once slightly cooled, cover and refrigerate until set

Your lemon curd is now ready for use - try it in your cake!
