In a heatproof bowl, microwave the white chocolate and condensed milk in the microwave for 20sec bursts, stirring between until the chocolate has melted.
Stir in the peppermint extract until spread evenly and pour into a greased and lined 8-inch square baking tin.
Add the crushed candy canes on top and other optional toppings then refrigerate for at least 2hrs until set. Cut into small pieces and enjoy!
Storage: Store your white chocolate peppermint fudge in an airtight container for 2-3 weeks.
Freezing: You can freeze your white chocolate peppermint fudge wrapped in cling film and foil for up to 2 months.
Substitutions:
- You can swap peppermint extract for a few drops of edible peppermint oil or other mint flavours such as spearmint extract.
Tips:
- Use cooking white chocolate or melting wafers/chips from the baking aisle for ease of melting.
- Melt your chocolate and condensed milk together slowly to prevent burning or separation.
- After a few days, your candy might start to dissolve a little depending on the type used. If using crushed candy canes, it's best to make this close to serving or use sprinkles instead.
